Nowadays, finding a good line of kitchen knives is very easy. There are dozens of reputable brands on the market selling excellent sets of knives for your kitchen. Finding a quality kitchen knife with a reasonable price, also is possible, although a little more difficult, Victorinox is a good example with its Fibrox line. But finding a knife line with an outstanding performance, where for example an 8in. Chef's knife sells for less than $10 is almost unheard of. That's why I decided to do a little of research on the Pure Komachi 2 Series knives to find out whether they are any good or not.
The first thing you notice about the Pure Komachi 2 is that they are made by KAI. The same company that manufactures the famous Shun knives. And let me tell you, they know what are doing at the hour of making knives. The Pure Komachi 2 highlight is clearly the sharp edge. The blade is made with a high carbon stainless steel (SUS420j2) that if treated correctly could produce excellent edges. This is precisely the case with the Pure Komachi 2 line. The knives are sharp and retain the edge for a long time. Besides, because the steel used to make the knife is not an exotic alloy, it is easy to resharpen them when the time comes.
However, the thing that really makes the Pure Komachi 2 knives to stand out is the amazing colors they have. Each knife of the line features a different color, both in the blade and the handle. This different colors are achieved covering the blade with a liquid coating that helps to prevent corrosion and permits the cook to avoid cross-contamination of his food, making it easy to remember which knife he used on meat and which knife was for vegetables.
The handles are made of molded resin and here is where you can see the fact that these knife are really an economic line. They feel cheap, like hard plastic. However, they provide an acceptable grip considering the price.
The Pure Komachi 2 line features a 4in. Citrus, a 4in. Tomato, a 4.5in. Fish, a 6.5in. Asian Chef, a 6in. Utility, a 6in. Sandwich, an 8in. Bread, a 6.5in. Santoku, an 8in. Chef's, a 9in. Slicing, a 3.5in. Paring knife, and scissors.
As you can see, the Pure Komachi 2 line has almost any knife that you can want for your kitchen. With a quality more than acceptable that clearly exceeds the price tag.
